The European Commission approved the inclusion of a Bulgarian food product in the register of Traditional Speciality Guaranteed, concerning foods with traditional and specific character. The meat delicacy has been granted Protected Geographical Status under European Union law. The aim of the scheme is to protect the reputation of regional products, promote traditional product and eliminate non-genuine production, which may deceive consumers or be of inferior quality. Role Trapezitsa will find its place among 1200 other protected products.
The name of the delicacy is derived from the name of the historical hill of Trapezitsa in Veliko Tarnovo, the old capital of Bulgaria. Role Trapezitsa is a pressed, raw dry-cured meat product prepared from pork and a mixture of salt and natural seasoning stuffed into a casing made of bovine blind gut or collagen and netting and bound with twine. The meat is tender and succulent, with pleasant savoury taste. Many of the local meat processing companies have this speciality in their produce portfolios.
Elena Fillet and Panagyurska Lukanka were added to the protected products register at the beginning of August. Until then the only Bulgarian product in the list was the Gornooryahovski sudzhuk which also originates from the region of Veliko Tarnovo.
